Can you pass the carbs??

OMG, I have discovered bread! Lol now I know this sounds nuts, but I mean real homemade bread! It's called Favorite Sandwich Bread, and my oh my is it delicious! It is a mix, but it's suet easy. Just put ingredients in a bread machine and let it dough! (hehe) I do however, only use the dough setting and then cook the bread in an oven. This just gives me the feel of true homemade bread, that my mom makes! I actually got to have a chicken salad sandwich today for lunch, DO YOU KNOW HOW LONG IT'S BEEN SINCE I'VE EATEN A SANDWICH!? yumm-o as Rachel Ray would say! Lol I don't eat bread very often, but when I do, this is it! I bet even gluten lovers would love this bread, they won't even know it's gluten free! Be sure to try it out soon, you won't be disappointed!

1in133.org says what!?

Yes, it's true. I thought I read the highlight wrong in an email and had to investigate further, the website 1in133.org really did say that the FDA is looking into making gluten free labeling mandatory! YES!!! I LOVE THIS! It all seems to be taking place in 2012, comment period is open for 60 days and it started the beginning of August. If you would like more info check out the website. 1 in 133 stands for atleast 1 person out of 133 has Celiac disease (Americans) or atleast that is how I understood it! Check this sight out, make your comments known to the FDA, and let's make it life a little easier and safer for our fellow Celiacs! I'm looking forward to great things in the future, starting with more stability in food labeling. Perhaps we can avoid being glutened, we shall see!!

Rainy day charades

It's my day off, it's pouring rain outside, and I'm feeling like Betty flippin' Crocker! Hehe That's right ladies and gents, I'm cooking up a storm today! Well, really just a little storm, but a storm none the less!!
Apple Sauce, homemade, yummy, amazing goodness in my Tumminess!! The apples are cooking, and I can't wait to get to mashing them up!! Haha yes I know, I'm way too excited to use a potato masher, but this is northern Maine people! Okay so here is the recipe:

Apple sauce:

Atleast 4 pink lady apples, peeled,cored, and cubed
Sugar, brown sugar, and cinnamon to taste

Cook apples in saucepan with a little water, maybe a cup or two until soft and mushy.
Strain them, and mash or put in food processor. Add sugars and cinnamon as wanted to taste!

Beware.....gluten is everywhere!

I went to Margaritas restaurant tonight with friends before seeing a musical at UMO. I had called earlier in the day, and was assured their facility could accommodate a gluten allergy. Great, sounds like a good night....just kidding!! The waiter had no idea how to deal with food allergies, and was quite nervous. I asked for a manager, he delayed it, I had been told to ask for a manager for this exact reason! He finally gets the manager, who is no more brilliant than the waiter himself!! Holy old hell people, I got glutened. I chose a salad with grilled veggies and bland grilled chicken, with no help from the staff. I chose this out of frustration and embarrassment that it was such an issue that I'm allergic to gluten. I wanted to crawl in a corner and die, or perhaps just eat the granola bar I knew was GF and was in my purse for emergencies. Not one person asked me how my meal was, which it was good but the pain set in before I was half way done. I didn't dare to say anything, due to the previous spectacle with ordering, that I was fearful of total embarrassment!! I think this has deterred me from eating out, I'm not willing to go to a place where I have to play Russian roullette with my celiac disease in order to eat, nor do I want to go and cook it myself and then pay for it! Which is exactly what it seemed needed to happen, I'm so unhappy about this. I used to love that restaurant, no more. I did, however, write all of this in a lovely forceful email to the main headquarters of the restaurant. I want for them to educate their staff, there's no need of people being exposed to allergens, especially when an institution is advertising that they can accommodate food allergies. I'll let you know what I hear back from them. Good night all! P.s. Sweeney Todd was a wonderful musical to see, just as great as the movie--well minus Johnny Depp haha
