Holy old lovin' WHAT A DAY!?! How many times do I have to tell a person, I have Celiac Disease I can't eat gluten?? Apparently TONS. That's fine, I understand that the world doesn't revolve around me, or at least that's what I'm supposed to think he he. I do know that my co-workers understand about my disease, I don't think they quite get what it entails. Let me explain a little, when a co-worker makes a cake or cookies and brings them in for the group I graciously decline. I decline because these goodies are not made gluten free, which is a no-no for me. When the cookie/cake baker asks why I decline because the goody is my favorite, I say," I"m sorry, unfortunately I can't eat them due to the fact that they contain gluten". They understand and go about their day, until the eating commences (2 seconds later)...which is when all common sense flies out the window and people start asking if I want one, why can't I have one, oh you can't eat that can you, what are you going to have instead? 20 questions....today was the day for 20 questions. I realize it's snippy of me to be cranky over the issue but I get so tired of constantly repeating myself! I think next time I will just make a sign and wear it around my neck. Perhaps the sign should say, "
Please don't feed gluten to the Celiac" catchy huh?
Well now that I'm done ranting I can tell you about what
awesomeness I came home and made, all because of my need for a little something sweet. GF granola bars, yummy! These bars are full of yummy awesomeness and are wicked healthy as well! How can you go wrong with nuts, chocolate, and peanut butter? Seriously, you can't! Shall I give out my recipe? HECK YES I WILL!! :)
Here it is: GF Granola Bar recipe by

Ingredients: ( all ingredients are GF )
1 box GF choc. chex
1-2 c almonds
1/2-1 c sesame seeds
1/2-1 c peanuts
1 c banana chips
1/2 c raisins
1-2 c craisin blueberries
1 pkg Ghiardelli milk choc chips (only milk choc is GF, check it out though)
1 c honey
1 c peanut butter
Process:
In a large mixing bowl combine all ingredients except peanut butter and honey. In a saucepan combine peanut butter and honey, mix on medium heat until a bit runny and well combined. Pour mixture over dry ingredients and mix together well. Pour contents into a greased or wax papered 13 x 9 pan, making sure the mix is well packed into pan. Refrigerate until ready to eat. Devour!
